How to make sandwich bread
Ingredients :
- 270 gr water
- 6 gr instant yeast
- 450 gr hard fluor
- 18 gr skim milk powder
- 8 gr sugar
- 8 gr salt
- 18 gr butter
- 1 gr bread improver
Steps :
1. Mixing dough
First, mix the hard flour with skim milk and instant yeast. After that, add water little by little. Then, put in the salt, sugar, butter, and bread improver. Stir until the dough is well blended
2. Bulk fermentation (1-2 hours)
let the bread in the container and covered with plastic or wet cloth
3. Knocking back / punching
4. Dividing and scaling
5. First molding
6. Intermediate proof (1-2 hours)
7. Final molding/panning
8. Final proof (45 min-1 hours)
9. Baking (220-240 celcius + bake 60 min)
10. Cooling
